Creating your own custom potato chips takes just a handful of spices and herbs and a few minutes in the oven. Tossing the chips with a bit of vinegar before baking infuses a gentle tang into the chips that’s reminiscent of pickle brine.

  1. Heat oven to 350°F/180°C. In a small bowl, whisk buttermilk powder, garlic powder, mustard powder, sugar, dried dill, onion powder, and ½ teaspoon each salt and pepper. In a HexClad Large Hybrid Roasting Pan (without the rack) spread the chips evenly. Sprinkle with vinegar and 1 tablespoon of the seasoning. Toss well. Don’t worry if some of the chips start to get soggy, they will crisp in the oven.

  2. Bake until chips are crisp and lightly toasted, about 20 minutes, stirring gently every 5 minutes. 

  3. Remove chips from the oven and sprinkle with about half of the remaining seasoning and half of the fresh dill; toss well. Top with the remaining seasoning and dill. Let cool completely in the pan, then transfer to a large bowl for serving.
