MAKE THE SAUCE:
- Combine all of the sauce ingredients in a small bowl. Set aside.
MAKE THE NOODLES
- Heat vegetable oil in a HexClad 25CM Hybrid Wok or 30CM Hybrid Fry Pan over a medium-high heat. Add the prawns and cook, tossing occasionally, until golden, about 1 minute. Remove prawns to a plate.
- Return the wok to a medium-high heat. Add the onion, ginger, garlic and chilli and stir fry, tossing, for 1 minute.Add the cherry tomatoes and pac choi and continue to stir fry for 2 minutes. Return the prawns to the wok and add the egg, scrambling, the egg with the back of a spoon, 1 minute more.
- Add the noodles and toss until the noodles are slightly charred and hot, about 2 minutes. Pour in the sauce and add the basil leave,s continue to stir fry until everything is coated in sauce.
- Divide between bowls and squeeze with lime.
